Caramel Corn

Ingredients:

4 cups puffed corn

4 cups popped popcorn

1 cup peanuts

3/4 cup butter

3/4 cup brown sugar

1 teaspoon vanilla extract

*This recipe is not one that I would consider “healthy”, but it is super delicious.  We all need a little food for our soul every once in a while, right?

Preheat oven to 300 degrees. On the stove, bring butter, sugar, and vanilla to a boil.  Boil for about 2 minutes. While butter mixture is cooking, combine puffed corn, popped corn, and peanuts.  Pour butter mixture over corn mixture.  Stir until mixture is fully coated.  Spread on baking sheet and cook for 10 minutes.  Remove from oven, let cool, and enjoy!

Oat Crackers

Ingredients:

1-2 cups oat pulp (what is left after making oat milk)

1 egg

salt and pepper to taste

Mix oats, egg, salt, and pepper thoroughly.  Spread as thinly as possible on a lightly greased pan.  Bake at 350 degrees for about 45 minutes. Let cool, break apart into smaller pieces, Enjoy!

Cinnamon Rolls

Ingredients: 

Dough:

3 cups quick cooking oats

2 overripe bananas

1 tablespoon honey

1/2 teaspoon baking soda

1 teaspoon cinnamon

Filling:

1 tablespoon maple syrup

1 heaping teaspoon cinnamon

1 tablespoon raisins

1 tablespoon brown sugar (optional)

Instructions:

Preheat oven to 350 degrees.  First, put oats into food processor and make oat flour by processing until oats are finely ground.  Next, add bananas, cinnamon, honey, and baking soda.  Process until well-combined.  The dough will be a little bit sticky, but should hold together well.  Spread dough out onto cutting board.  In a small bowl, combine maple syrup and cinnamon.  Spread evenly over dough.  Sprinkle with raisins and brown sugar.  Then, slowly roll dough starting from one end and working towards the other.  Dough may need a little bit of help un-sticking from the cutting board.  When dough is in one big roll, cut into pieces and put each piece into a muffin tin.  Bake for 15-20 minutes. Drizzle with honey or maple syrup.  Enjoy!

 

Homemade Healthy Potato Chips

Ingredients:

1 potato, very thinly sliced

salt and pepper to taste

1 teaspoon olive oil

Instructions:

Lightly grease a large, microwave-safe plate.  Evenly spread out potato slices (about 10 will probably fit, depending on the size of your plate).  Microwave on high for about 3 minutes.  Flip slices over, sprinkle with salt and pepper, and microwave for another 2-3 minutes.  Let cool (this step is crucial).  Enjoy!

 

**Works well with russet potatoes or sweet potatoes

Parsnip Chips

Ingredients:

2-3 Parsnips

Olive Oil (or olive oil spray)

salt and pepper

Instructions:

Thinly slice parsnips (I used my mandolin slicer).  Lightly grease microwave-safe plate.  Spread parsnip slices onto plate, without overlapping. Sprinkle with salt and pepper to taste. Cook in microwave* on high for 3-5 minutes, checking every minute.  Stop when parsnips are lightly browned.  Slices will be chewy when they are first removed from the microwave but will crisp up when they cool down.  Enjoy!

*I’ve tried both the microwave and oven and the microwave is not only much more convenient but it produces crunchier, tastier chips.
