“Beanana” Mini Muffins

This recipe is so simple yet so tasty.  It requires only 4 ingredients and makes for a balanced, delicious breakfast.  The garbanzo beans add a yummy nutty flavor and some protein while the overripe bananas make them nice and sweet.

Ingredients:

1 can garbanzo beans (I used the no-salt-added kind)

4-5 overripe bananas

1.5 cups rolled oats

1 tsp. baking soda

vanilla, cinnamon, etc. to taste if desired

 

Instructions:

Preheat oven to 350 degrees. Rinse beans and add them to food processor – process until smooth.  Next, add bananas and again, process until smooth.  Finally, add oats and process until smooth.  This mixture should be the consistency of normal banana bread batter.  If it is too thin, add more oats. Put batter into lightly-greased mini-muffin tins.  Bake at 350 for 20-30 minutes. Enjoy!
